Real innovation means knowing which things to change

A lot of wineries have spent a lot of money trying to improve their business.

We have too, but we also know when to stick with what we’ve got. This centrifuge has been spinning wine samples in our lab for decades. And while its brakes are a bit temperamental and it has a few little quirks, it still does its job well. Because if experience has taught us one thing, it’s that new doesn’t always mean better.
