100 Year Cabernet Sauvignon 750ml

2013 Cabernet Sauvignon from our Gimblett Road vineyard in Hawke’s Bay was so outstanding it was put aside to be the wine to celebrate the centenary of Babich family winemaking. Our viticulturist identified the best rows of grapes and then hand-picked fruit was crafted into a small volume of exceptional wine – aged for 18 months in barriques of French oak.

The packaging reflects the exclusive nature of the wine. Every bottle comes in a carefully designed box, with a certificate personally signed by Joe Babich – adding to the authenticity of the wine, and making it a perfect gift for wine lovers. Each bottle has an ultra-high end cork and is hand waxed.

Ideal with roasted red meats. This Cabernet Sauvignon makes a good partner for a whole fillet of beef, roasted rare. This is very special wine and would be perfect for an equally special meal.

Production Notes:

330 individually numbered bottles with certificate of authenticity, personally signed by Joe Babich.
The grapes were picked from extremely low yielding vines grown in our Irongate Vineyard in the heart of the exclusive Gimblett Gravels district (Hawke's Bay) on the 15th April 2013. The fruit was at absolute ripeness, crushed into open vats and fermented to dryness over nine days with frequent plunging of the cap. On the 9th of May (after a total of 24 days on skins) the new wine was drained to a blend of new and old French oak barriques. Malolactic fermentation took place in these barrels. After 10 months in oak and several rackings two 1st fill barrels were selected and set aside for this bottling. A further 7 months later the wine was removed from barrel and prepared for bottling with a light egg white fining. This wine was bottled on the 18th December 2014 with minimal filtration. A sediment can be expected.

Tasting Notes:

Sweetly perfumed with violet and blackberry. Hints of vanilla and smoky cedar join also to create a warm and embracing aroma. Sweet floral and dark fruit elements continue on the exceptionally smooth and dense palate. Complex flavours reminiscent of fruit cake, cocoa, leather and tobacco all combine in a harmonious wine that is both serious and beguiling.
